​​​​​​​Diving into a bowl of hotpot is literally an electric feeling. The strong citrusy perfume fills your nostrils invigorating your senses. The hot spices buzz and cause vibrations in your mouth. Soon after your lips and tongue start to feel numb. The Mala (麻辣) or “Sichuan Pepper” is responsible for this unique citrus tingle spicy flavor. This iconic sensation is familiar yet always exciting. This is the perfect way to describe the energizing city of Shanghai. Neon signs light up the dark sky luring passersby to make a quick stop. Meituan (美团) and Eleme(饿了吗) delivery drivers speed by in colorful scooters carefully navigating the bustling streets. The Shanghai night scene is bursting with life in the form of sights, smells and of course incredible taste. But no matter how fast everything seems to be going there will always be time for some hotpot. Traditionally this dish is meant to be shared and enjoyed, and there’s nothing spicier and more exciting than that.
