Tinned sardines. A true gem of the oceans. Succulent, rich, delicate flavors all wrapped up in a conveniently small package. They can be kept for years; just like a fine wine, they only get better with time. They are the Pauillac and the Margaux of the sea. A veritable grand cru, tinned sardines have rapidly become the star of gourmet food stores and chic brasseries. 
One bite is enough to understand the difference. 
This high-end tinned, delicate silver fish is distinguished by its subtle taste from being cured – with great care – for 12 months. On the outside, retro, and glossy packaging – a nod to the biscuit tins of our childhood – covered in bold colors and illustrations inspired by Art Nouveau. Inside, under the metal lid, sardines lie neatly arranged. They swim in golden olive oil, extra-virgin (if you please), as enticing as they are delicious. Long gone are the sad gray tins, drowning in rapeseed oil. Tinned sardines are now an haute couture dish!
Always in style, a hot summer will accentuate the melting side. A rotten summer with storms will tend to waterlog the sardines. There is a clear vintage effect on taste, in fact, the great sardine specialists are able to detect the dominant flavors depending on the year: dried fruit in 2019 or ripe avocado in 2020. Once you begin your collection of tinned sardines, remember to turn the tins over several times a year to maintain an even distribution of oil in the can. This way, the little beauties can all be equally preserved! What a treat!
