I’d like to teach the world to slurp, because when it comes to enjoying a steaming hot bowl of noodles there’s only one way to do it. Forget everything you’ve been taught about table manners, the same rules don’t apply here. In front of us we have a generous serving of soba (buckwheat) noodles. For maximum satisfaction consume while still hot. Now listen, eating noodles requires your full attention. Chopsticks in hand, look down at your bowl, establish a relationship with your noodles. Now we can begin. Dip into the hot soup, gathering a delicious bunch, admire them for just one second before placing in the mouth. Once you’ve made it here start slurping, slurp like you’ve never slurped before. Take another second to savor the lightly smoky aroma of the kombu (dried kelp) as it passes through. Delicate yet intense flavor. But don’t stop there, keep going, keep slurping! After all the noodles are gone we are left with the best part, the hot mentsuyu broth. Carefully cradle the bowl with both hands, bringing it closer to your face and drink the mouthwatering remains of our Soba encounter. Thank me later.
